My family loves eating baked Zucchini! Even the kids will gobble up these Baked Zucchini Fries. They are so easy to whip up. In the video below you can see the quick and easy coating method.

Ingredients:
3 Zucchinis – washed and cut into fry shapes (you can do disks too)
Flour to Coat Zucchini
1 Cup Breadcrumbs or Panko
1/2 Cup Parmesan Cheese
Palmful for Italian Seasoning
1/2 Teaspoon Garlic Powder
Salt and Pepper to Taste
2 Eggs – Beaten
Bake – 425° F for 15 min or Until Golden Brown
Steps:
- Prep baking sheet. I like to cook the pieces on a cooling rack that is placed in the center of a heavy baking sheet. You can also use parchment paper on a baking sheet. I use a bit of non-stick spray on the cooling rack.
- Coat the pieces in a light dusting of flour. Dip into the beaten eggs and then coat with the breadcrumb mixture.
- Bake green side down for 25 min at 425° F.
- Eat while warn. Pair with a dill or ranch style dip.
- Enjoy!
