This Pesto is recipe is so easy to make. You will need fresh basil. Make sure when you measure the basil that you pack the basil into the measuring cup. I love homemade pesto….. I love store-bought pesto….. I love my mom’s pesto…. I guess I just love all pesto. I make mine with pine nuts because I love the buttery rich taste of pine nuts.
If you don’t have pine nuts then you can use walnuts or even a mix of the two.
2 Cups Fresh Basil
1/2 Cup Grated Parmesan
1/2 Cup Extra Virgin Olive Oil
1/3 Cup Pine Nuts
3 Garlic Pieces Chopped
1/4 teaspoon Salt (I like Jane’s Crazy Mixed)
Fresh Ground Pepper
Squeeze of Lemon
Use a food processor to blend and chop the Basil and Nuts. Add the Garlic and Cheese and blend again. Add the Salt and Pepper. Drizzle the Olive Oil over the pesto and bend in small bursts. Add a squeeze of Lemon just before serving.
This pesto is great on a tomato sandwich…..just spread it with a knife, build you sammy and enjoy.
I even love this pesto spread on a cracker. For the topping, I added a bit of fresh mozzarella cheese and a tomato slice.
